Some of the biggest changes you make in life aren't documented, you just get up one day and do something different without a lot of hoopla. In mid 2016 I began eating a vegetarian diet. I don't exactly know when my veg-versary is because this social media post 5 months later is all I could find when I looked back at.

But it is a change I do not regret! I was never a big meat eater anyway so it wasn't a huge transition. I had a colonoscopy in 2020 and the Dr referred to my colon as "pristine" which I found hilarious! But his comment certainly made me rejoice in the benefits of vegetarian life!

Most of my favorite meals are veggie packed, I'll share some recipes here through 2021 and beyond:
