Sunday Snapshot

My Sunday Snapshot this week is the batch of veggie fajitas I made for dinner Friday evening:

We eat these at least a couple of times a month, they've been a favorite for several years!

What's in it?

Saute 1/2 onion and 1 bell pepper

Add:

A good dollop of your favorite bottled salsa

1 can of chickpeas

1 can of black beans

1 C frozen vegetables

Stir fry to warm all ingredients.

Serve on warm tortillas with cheese, sour cream, Mexican coleslaw.
