Meal Prep to Start the Week

It's Monday! Are you feeling ready for the week ahead? One way to feel organized and ready to tackle your week is to meal prep. 

Today I made edamame salad which I'll eat for lunch and dinner until it's gone in a couple of days. 

I created this recipe a couple of years ago and still love it, soooo many flavors. Here's a previous post in which I shared my recipe:

It's only a month until the removalists come to ship all our belongings to Australia so it's really busy here and hubby and I are perpetually exhausted. So meal prep is a life saver.

Today's only exercise was a 40 min dog walk which we truly enjoyed as the sun was shining 👌♥️☀️
