Simple Vegetarian Mediterranean Pasta

Tonight we're having pasta for dinner, here's my simple vegetarian, Mediterranean pasta recipe:

3 large diced tomatoes
1/2 red onion
2 bell peppers
Pepper and salt

Stir in and simmer 20 mins:
1C olives (green, black or a mix of the two)

Before serving stir through:
1/2 C feta cheese
1/2 fresh basil

Cook pasta and per packet directions.
Serve pasta and sauce then top with parmesan flakes.
You can sub fresh green veggies for half of the pasta to make the meal less carb heavy, I like asparagus and broccolini for this.
