Easy Breakfast Meal Prep Recipe
I usually eat two slices of eggy loaf for breakfast! So I thought it was about time I shared this original recipe of mine:
Lots of great protein and vegetables to power me through the morning! I usually sprinkle some cheese on top before baking too, which makes the top nice and crusty.I cut it about 1" thick and toast us 2 slices each in the toaster oven every morning for breakfast. One batch (two loaves) does 4 days breakfast for hubby and I (16 slices).
Variations:
- You could add bacon (I'm vegetarian so I don't)
- Place a slice in a wrap or taco with salad/other fillings and sauces
- Serve with salad for dinner
- Add some herbs/spices (e.g., paprika, cayenne, Italian herbs)
- Use pepper jack cheese for some extra zing
What veggies work well?
- Grated zucchini
- Diced bell pepper
- Grated carrot
- Grated broccoli stalk
- Mixed frozen vegetables
- Finely sliced beans or snow peas
- Grated potato (frozen hash brown potato works well)
- Finely diced sweet potato
Note: you can use canned corn but the loaf won't need to cook for as long if the veggies aren't frozen.
